Does anyone have a recipe for raw mayo? I have a sandwich I'd like my husband to taste, but don't know what to put in it as a replacement to mayo
It's the eggplant bacon that I'm wanting him to try in a sandwich!
Any ideas what to put on there as a dressing?

I've got a recipe still in progress :) My raw brother likes to experiment in the kitchen and here's what he came up with... I find it's a bit sweet, even without the agave nectar, so if anyone has any suggestions, I'd love to hear it!
-2 cups soaked pine nuts or cashews (I used cashews, maybe they're just sweeter?)
-1/2 cup oil (I use hemp oil, olive oil would work too)
-1/4 cup Agave Nectar (rather sweet, maybe start with 1/8 or even none)
-1/2 cup lemon juice
-1 t salt
-1 clove garlic
-1/2 t ground mustard seed
Throw everything in the blender or processor till smooth... of course it will thicken in a couple minutes.
I'll even just eat this as a dip.

OMG I make those eggplant bacon BLT's all the time on onion bread! You gotta try my mayo recipe!! It's the best mayo i've ever tasted in my entire life!!
1 cup almond milk
1 cup extra virgin cold pressed sunflower oil
1 tablespoon onion powder
Add everything to blender except oil & blend while slowly adding the oil. Chill in fridge to thicken up.
You will be licking your blender clean, it's that good! :D

Where in the world do you find sunflower oil?! Probably health food store!
I will definitely try it out as I am making up 2 more batches up of the eggplant bacon and getting it ready to dehydrate tonight!
I think I know where I can find it! Is it thick like coconut oil, or thin like olive oil?
