When I am full, how do I stop eating? When I get hungry, what size proportion shall I prepare to satisfy myself comfortably?

Step awaaaay from the plate! Put your hand down to your side. Walk away. Pick up a book, go outside and water your plants, walk the dog, or watch a movie with your friends.

But really, can you explain your questions more?

Like the past few times I've made nut cheeses or pate's or guacamole, (or dessert!), they have tasted sooo good, and I find I will just eat a lot of whatever I have made. To the point where I am too full. Almost uncomfortably... Because it tastes so good. When I would like to be comfortably full.

Well, if that really is the issue, then you really do need to just teach yourself to stop eating when you're full.
I know how it goes - you make an awesome recipe and you just can't stop chowing down!
But making yourself feel stuffed is REALLY hard on your body.
Teach yourself to listen to your Body. :)

For serving sizes I read somewhere before that a good healthy portion is the area of your two hands held together, palms up. (Correct me if I'm wrong)

I'd suggest you use some EFT (emotional freedom technique) on a regular basis. Something like ~
"Even though I feel to eat everything I make, I choose to eat only until I'm comfortably full."
"Even though I eat until until I'm too full, I choose to to love, support and care for myself."

Thank you Revvell. I also have noticed that when I get nervous about something, I will eat more than I should. I'd like to have a diet where anything in the world can happen, and my diet remains steady/ the same.

I have this problem sometimes, just some things to remember:
If you stop eating when you're full and then fridge it (sometimes I feel pressured to finish it on the spot) it'll taste alot DANKER when you actually crave more of it. I made this mistake with a dankarse birthday cake I made, it was uber dank and I forgot how dank it was cuz I ate too much in one sitting. After I took a little break it blew my mind once again.
Also, you can also try to make smaller, more appropriate portions of whatever meal you're preparing. I exercised this today when I made ice cream, usually I make more than I need so I made a little bit smaller of a serving and everything was gravy.

Raw food is so filling for me that I have never had this problem. I get so full so fast and simply stop eating. I leave whatever is left on the plate. Put it in fridge.

There have been times when I'm eating something fabulous and my taste buds simply shut down and I can't taste a thing. When that happens I respect it and stop eating. I think that is what is supposed to happen when we are getting all the nutrients we need and our bodies are functioning properly.
The times I overeat are when I have waited too long to eat and/or I'm munching while I chop. The good thing about eating all raw is it only takes a few minutes to recover from eating too much salad. :)
Too much dessert is a different story. I'm learning if there is a dessert involved, better to skip the meal and just eat the desssert. ;)
