"Sweet Gratititude - New World of Raw Desserts" This is an awesome book. It is loaded with recipes and detailed instructions on how to create desserts; pies, layer cakes, cookies, ice cream, and more.

So far, I've made 3 recipes from this book. All were AWESOME! The kind of desserts that would cost $9.00 a slice, if you could even find a raw restaurant that makes them.

There is a chapter about Irish Moss, too. I found the following information especially interesting.

Health Benefits of Irish Moss (the short version)

Respiratory
Soothing effect on virtually all mucous membranes throughout the body. Helps many respiratory problems including bronchitis and pneumonia. Relieves dry coughs and eases sore throat.

Digestion and Thyroid Function
Soothes inflamed tissues of the intestinal tract, said to absorb toxins and draw radiation poison from the body. Rich in iodine which supports good thyroid gland health. Relieves problems associated with iodine deficiency (goiter, fatigue, low metabolism, poor skin and hair, etc.).

Weight Loss
Decreases appetitie by providing increased feeling of fullness. The increased metabolic rate caused by improved thyroid function (from iodine content) helps to increase energy, burn fat, and might be helpful in weight-loss regimens.

Blood Pressure
Contains blood thinning properties and is considered anticoagulant. Early research has claimed that it can reduce blood pressure and the risk of arteriosclerosis.

Skin Care
Used externally it softens and soothes the skin. Eases sunburn, chapped skin, dermatitis, eczema, psoriasis, rashes, and premature wrinkles.

Pregnancy
Supports the healthy production of amniotic fluid, and after birth it adds nourishment to breast milk.

I'm not saying it is true about the weight loss, but I've eaten a lot of pecan pie this week and still lost weight. ;) :)

The Pecan Pie (left)and the Chocolate Creme Pie (right) are both made with Irish Moss. The Chocolate-Orange Cheesecake (middle) does not contain Irish Moss. It is set with coconut oil and cacao butter. Next up.... I'm making the Pomegranate Cheesecake for Christmas Eve. :)

Happy Holidays!

Where do you get Irish Moss? And what is it? I have seen it many times used in desserts but I have no idea where to get it or how to use it. Thanks!

Oh dear, that Chocolate Creme Pie is calling to me.....

That pie is a slight variation of the recipe titled "Chocolate-Hazelnut Mousse Pie" I used almond milk instead of hazelnut milk. It is fantastic.

If you want chocolates, there is an entire chapter devoted to making chocolates. I'm reading that chapter today.

I can understand. I was afraid of screwing it up and wasting all those precious ingredients. Now that I've cleaned and soaked it several times, no worries. :)

I follow the rinse and soak procedure on page 183. However I see the last part says after the soaking process is complete don't drain or replace the soaking water. That you can store it in the soaking water for at least a week. I had read somewhere else to drain the water after 24 hours and store it without any water in the jar. Apparently either way will work fine. Next time I will store (a small amount) in the soak water and see if there is any difference.

It is a seaweed! Go to RawVeganSource (http://www.rawvegansource.com/cgi-bin/commerce.cgi?display=home) and search for Irish Moss to see what it looks like. I am grateful to have this store in my area. The people that run it are wonderful. I take them pieces of almost every pie I make. If I ever get certified and licensed they have offered to sell my pies in their store. They do sell goods online nationwide. There is a one-time fee to join.

I have more pics and info on Irish Moss on an entry in my blog. I'll find it and put the link here (http://www.rawfoodtalk.com/blog.php?b=15772).

I just ordered mine from Raw Food World. It's one of their "at cost" specials this month. I believe the coupon code was "hnymn" ~ to find it at the sale price, type in "hnymn" up in the search box, top right corner.

The sale price is $14.95 for 16 ounces. They also have a YouTube video on how they soak it and blend it and store it.... Irish Moss for Recipes (http://www.youtube.com/watch?v=e2zOANd9V6w) Irish Moss Recipe (http://www.youtube.com/watch?v=zk7RNeGo50s)

I ordered the Irish Moss after watching those videos and hearing it went on sale....

Now I want Cafe Gratitude's Dessert book! *Ü*

I'm such a huge fan of their first cookbook, so I'm sure I'll need to add this to my collection. I'm pretty sure I have an addiction to raw food cookbooks! =)

The pictures look awesome! And tasty!

List of recipes made from this recipe book, so far....

With Irish Moss:

Pecan Pie
Chocolate Hazelnut Mousse Pie

Other recipes without Irish Moss:

Chocolate-Orange Cheesecake
Banana Cream Pie
Heavenly Mudslide Pie
Pomegranate Cheesecake
Raw Cacao Fudge

All were worthy. My highest ratings go to the Chocolate-Orange Cheesecake and the Raw Cacao Fudge. Both were simple and extraordinaire!
