Take Alyssa's mashed potatoes and mound them on a dehydrator sheet in the shape of split potatoes. Dehydrate until the outside is dry. While this is happening make the butter Sweetgoddess posted and Sour cream (not mine, came from the internet somewhere):
Blend until creamy:
1 small zucchini, peeled and chopped
½ c almond butter
1 tsp apple cider vinegar
½ lemon, juiced
¼ tsp salt
Add and blend until smooth:
1 tsp psyllium husk powder
Take 'potatoes' from dehydrator, the 'cut' side will still be soft and eat warm with 'butter' and 'sour cream'.
OK it's not fruitarain, because of the cauliflower, salt, and possibly husk powder. Of course if Alyssa's book (which I am expecting) has a sour cream recipe it probably doesn't have the powder and would be better. Nuts and seeds are a part of the fruit in my understanding. Maybe I'm wrong. This is the best I could think up for you.
Hope you enjoy,
Teri S
