View Full Version : Which Kale chips should I make??

So this will be my first attempt - but there are quite a few different recipes, which should I go with first, the basic tahini one - is it really ready in 4 hours????

or the cheesy or ack, which one :D

Let me know the recipe when you decide. I've always wanted to try making them but I don't get how they get crunchy!

alright I'm so ready to do this, I have all the ingredients out for the awesome goddess chips, off I go!!!

I'll have plenty of time in the future to try them all! :D

Hi ginadj ~ Here's the only recipe I've made and we really enjoy them! *Ü*

Can't get enough kale chips. All different kinds. Haven't tried one yet that I don't like. The dinosaur kale has more of a "chip" quality. The curly kale holds more of a coating and all those curls makes an extra crispy, textured crunch.

The last batch I made was using curly kale. They turned out rich and flavorful. Here's the recipe:

CHEESY CURLY KALE CHIPS - raw knitster - blessings clone

1 large bunch green curly kale***, washed, large stems removed, torn into bite size pieces

COATING:
1 cup cashews, (soaked 2 hours)
1 red bell pepper, seeded and chopped
juice of 1 lemon
1 T. nutritional yeast
1/2 t. himalayan pink crystal salt

Put coating ingredients in Vitamix. Blend until smooth. Using your hands,(same as with Awesome Goddess Chips which are indeed AWESOME), spread coating on kale pieces getting it inside of curls. Put on teflex sheets and dehydrate at 105 overnight or until coating is dry. Slide onto mesh screens and dehydrate 12 hours, or until very crispy.

That seems like a long time to dry kale chips. The kale was very curly, and the coating very thick. The smell drove my husband crazy, he LOVED it!

***The kale should be firm and curls spikey. If kale is limp, wash it, cut an inch off the end of the stems and stand in a bowl of water for an hour.

You have that right. :) I have heard it's a "living food", but from what I've read about the process to get it on the shelves, that's not correct either.

Some people choose to use it anyway, because of the flavor it adds & the benefit of the vitamin b12 it offers.

I've never used it, I've heard it's "addictive" in a yummy way, and for me that would be a bad thing. ;)

If you see it in a recipe, and you would rather not use it, just leave that ingredient out. That's what I always did. If it was a very large part of the recipe, I just found a different recipe!

I can't decide which kale chips to try either, and I really want to try some!!!:D

Katie, that took me a little less than an hour from start to finish, talking to my kids in between and all that good stuff :) it was a very easy recipe and I wasn't quite sure I Loved the sauce - It was very strong on the ACV - but I just tasted one from the D and I can tell the flavor has changed already and it's only been 45 minutes or so!

Deb that is the other one I was going between - I'll try that one next! I am curious since that recipe says they will dehydrate almost a whole day, yet the goddess one I did says 4 hours - we shall see how long it takes to get very crispy!

well I keep sneaking bites - oh they are so tasty and they do literally taste, crunch, and melt in your mouth just like a chip - they aren't even done yet and I am sold!!!!!!!!!! and so easy - the only thing I am going to gauge next is whether or not they even needed to be layed on a teflex - I forgot and put 2 trays of them directly on the screens - didn't seem to make them stick or anything and obviously they dried faster - so I think that saves a step and you can put them directly on the mesh!

I think how long they take to get crispy depends on the amount of sauce you use. I usually just use olive oil and salt and they only take 3-4 hours.

I put them directly on the mesh screens, no flipping required. Drying time will vary according to how thick you coat them with sauce. They may be dry enough to eat immediately in 4 hours, but they may get soft when stored. I find drying them longer will keep them crisp longer. So far up to two weeks is as long as I've had them stored in an airtight container and they were still good.

Cheesy is still my favorite sauced chips, but my all time favorite is plain chips. About 2 Tablespoons of olive oil hand rubbed all over the kale (1 large bunch), then a dusting of about 2-4 Tablespoons nutritional yeast and 1/2 teaspoon of Sun Fire salt (finely ground sea salt will do). Dry at 110 to be ready in 3 hours, or longer if you are not eating them right away.

I don't care whether nutritional yeast is raw, live, or addictive (which btw I've heard before and think is ridiculous). Before I started using nutritional yeast my "raw" diet was seriously lacking in B vitamins.

Yes, please try the recipe Deb posted for the Cheezy Kale chips. Those are AMAZING! I usually try to keep them on hands. You can add all sorts of fun things to the mix too, such as fresh garlic, or chili powder/cumin for a Mexican flair, or fresh ginger and tamari for an Asian twist.
They are fantastic no matter how you make them.

Nutritional Yeast isn't RAW, but you can find a Living version of it. Alissa uses it in many recipes, so on this board at least, it's fine. ;)

Of course, listen to your body is the #1 Rule... so if it affects you negatively, don't eat it. ;)

I'll have to search for the living type & try it. Or maybe I'll just try the regular kind. I love Alissa's book, I just haven't used that ingredient yet. I often wonder if would help me have more creativity in the kitchen!

I have self control issues, which is why I said it might be bad for me if it was addictive. :o That's my problem, not the fault of any actual food used in raw un-cooking!

Katie - hmmm......did you really massage it into the kale - I think that is what got mine so nice!!!

I am definitely gonna try Deb's recipe next because as of right now I haven't eaten the rest - for some reason my brain puts up a halt on that vinegar taste, the first 2 days I was really snacking on them - if I make the goddess recipe next time I won't put so much ACV in, it is really over-powering now!!

Hi KatieP ~ This is the only kale chip recipe I've made, so I don't have anything to compare it to. I make sure I spread the mixture on each chip the best I can.

I use an enormous (!) bowl so I can mix, mix and mix some more - I'm mixing to get the batter as evenly distributed as possible.

I've seen a video (Raw Food World) where they were inside Blessing's facility making kale chips. Their batter is hand applied to each chip - I was impressed! I don't think I'd have the patience to do that.

Perhaps RawKnitster or someone else with more chip makin' experience will see your post and add their advice. *Ü*
