remember or find what temperature food needs to stay below before it is officially cooked...and are we talking celsius or fahrenheit? I am having one of those days where numbers are not making sense and I just need someone to give me the answer. I have tried several searches and I am not getting the right info. thank you so much to anyone that can help me feel less dumb today:)

118 degrees Fahrenheit....

Some folks will do 115 degrees Fahrenheit. :)

Seems to vary 115-118 fahrenheit. Some say slightly less.

The Excalibur Dehydrator manual, I believe said that from their own testing they generally found enzymes to survive up to 140 degrees. I usually dont go higher than 115, unless I want the job done quicker.

yesterday was one of those days for me..nothing made sense. I just bought a new convection oven and was hoping to use it for dehydrating but it's lowest heat is 170 and so it is far too hot for that use. I wish I could use it but alas...tis not to be. thanks again !!!

I've heard of people leaving the oven ajar to lessen the temps... with an oven thermometer handy that could work out well.

Not sure if leaving the door cracked will work that well or not but the I love the pbuttercwup id. Princess Bride is one of my favorite movies. Nice!!

I've use an over with a pilot light.......and then sometimes I'd turn the oven on the lowest setting for just 3 mins or so - turn it off for 30 etc.....

But you have to be around for that!

...one of my favorite movies of all time. some of my favorite quotes from that movie are insults...just so classic.
Thank you all for the replies. I would love a dehydrator but the cost is a deterrent right now. I will probably just carry on without, but it would certainly add to the menu options. I could try starting the oven and turning off the oven and just keeping the temp low. It would be a lot of work but do-able. Since it has a digital readout it would give me a good idea of where the oven is temp wise. thanks again:)
