Hi there,
My mother in law gave me a lot of raw rhubarb from her garden yesterday. Does anyone have any raw rhubarb recipes please?

I can find no raw recipes for rhubarb, perhaps because it is so tart and requires so much sweetener to make it palatable.
Here's some information on it from Bridget Mars, raw food chef. I was fascinated to learn that it is a vegetable not a fruit!:

The bottom of the article mentions eating it raw.
If you have agave nectar, you could try blending it with the rhubarb and perhaps ripe bananas in a blender to see if would make a sweet pudding (I'm not sure what you call this in the U.K., but for us pudding is always sweet, never savory). It's worth an experiment since you have so much! Or, combine with strawberries if you can find any now!
Don't eat the leaves; they are toxic.
By the way, if you succeed in eating rhubarb raw, you're a better woman than me!!

Maybe you could chop it in the food processor, mix with strawberries that you slightly crushed . Make a sauce in the blender of strawberries and agave or honey then pour over your rhubarb and strawberries, mix well and place in a dehydrator to warm and soften a bit? You can have like that or put all that in a pie plate and top with pulverized almonds mixed with agave or honey for a fruit cobbler type dish, like Alissa's apple crumb cake-yumminess.
My mother always made stewed rhubarb and strawberries, so that is what I associate rhubarb with.
Anyways, do let us know what you end up doing. Curious! :)

I grew up in Texas and never heard of rhubarb. My new husband couldn't believe this and had to introduce me to this. He purchased the rhubarb at the store and proceeded to dip it in sugar to show me how it was done. (before raw days). Well, in my opinion that was the most sour thing I had ever eaten. Never again to try it. I even have it growing in my yard now (MT).
So maybe dipped in honey???? Hey, I might enjoy licking the honey off!

I ended up making a pudding of rhubarb, strawberries, raspberries, dates and dark agave nectar. I just whizzed it up in the food processor. I topped it with mint leaves. It was lovely, and reminded me of being young, and eating rhubarb from the garden. I had forgotten about that. It is really nice raw - I ate some before I put it in the processor and the smell of it was awesome. YUM!
