I posted this in another thread but didn't get a reply. Has anyone on here ever had problems with dehydrating tomatoes, my sister has been having problems with her tomatoes turning black in the dehydrator, she sets the dehydrator on at 105 deg.

I've had some problems dehydrating my tomatoes this summer but haven't had them turn black. In my case I found I had to slice the tomatoes thinner so they would dry fast enough (I have a very, very inexpensive dehydrator...no fan, even) or they would mold. I don't know if the blackness you describe could be a type of mold...if the tomatoes are too thick and take too long to dry it is a possibility.
You didn't mention in your post how long she was dehydrating them? Is it possible they were in there too long and overdrying or are they just turning black right away?

mine turn black all the time, no challenges on taste, just means you didn't use sulfites to keep them read, orange or yellow.
Also, if I dry them to crispy, they turn black, but if I leave some water in them, they stay semi-red.

I think tomatoes become black when they are too ripe. Try one that isn't quite so ripe, not unripe, just nice and fresh.

The next time you are in a health food store, look at the dried sliced tomatoes (not the sundried whole tomatoes) and they are usually a dark red/leaning towards black color.
