View Full Version : Anyone Have a Raw Pretzel Recipe?

I have been looking for a good raw pretzel recipe with no success. :( Anyone?
Here's one from my files, but I've never tried it so I cannot comment on their flavor:
RYE PRETZELS - Rhio
4 cups sprouted rye
2 cups sprouted sunflower seeds
1/2 cup soaked or sprouted caraway seeds
1 tbsp. onion powder
1 tsp. Celtic sea salt
1) Measure all ingredients into a bowl and with a large spoon mix them.
2) Feed the ingredients through a Green Power juicer utilizing the pretzel-making attachment.* As the dough comes out of the machine, it will be in the shape of a long, continuous breadstick. Place this dough gently on a table. Then you can cut it into breadsticks, or you can braid two of them together or create other interesting pretzel shapes.
Place the pretzels onto a mesh dehydrator tray and dehydrate at 95 F for 24 to 48 hours. Yield: 14 braided pretzels. When thoroughly dried, they can be stored at room temperature. The Pretzels can also be dehydrated to the chewy stage. These must be stored in the refrigerator.
If you don't have the Green Power juicer, you can make the dough in a Champion juicer with the blank in place and then shape the dough by hand into pretzel shapes.

I think that almost any cracker recipe would do it. How about this one: It's very crispy when done. Again, either put it through an attachment as mentioned above or roll by hand.
"Just like Ritz" crackers:
2 ½ c. walnuts soaked 1 hr. or more
2 ½ c. cubed zucchini
½ c. ground golden flax seed
¼ c. hemp seed
2 teaspoons sea salt
Grind walnuts in FP until they are in very small uniform pieces (cous cous looking) - transfer to bowl
Grind zucchini in FP until they are in very small uniform pieces - add to bowl
Add ground flax, hemp and salt. Blend well. Add enough water to make spreadable dough ( 1/2 to 1 cup) IN THIS CASE YOU WOULD LEAVE THE DOUGH MORE FIRM IF YOU ARE HAND ROLLING IT.
Dehydrate - until crisp

I'm going to be soaking my rye berries tonight so they will be ready in a couple of days for the recipe! I'm interested to see how these will turn out. The Ritz cracker recipe sounds good too. I must try this one also! :D
