When I did my food shopping, I decided to be a *little* adventurous and buy a few items that I wouldn't have normally to experiment and see what all we like. I'm going to do this every time I food shop from now on I think. Anyway, I got ONE coconut to play with, and now am trying to figure out what to do with it. Can anyone suggest something to do with the coconut? I don't want to buy more coconuts (at that cost they are definitely a treat in this house!) until I have some idea what to do with them that my whole family will enjoy.

It depends on if you got mature or young coconuts which are a completely different texture and cannot be interchanged at all.

If it's mature coconut they should cost about $1-2 at most, and it in in fact the cheapest food item I've ever found because one mature coconut has about 1400 calories, that's enough to feed the average person for close to a day, so you could be eating for a total of $2-3 a day of you ate only coconut (it wouldn't be too healthy to eat just one item but it's just an example to show they are the cheapest food there is like other nuts even though they may appear expensive).

if its a young coconut i'd recommend blending the meat and water with a little agave and sea salt to make a delicious smoothie... best in a high speed blender though, otherwise it comes out a little grainy.
