SooOoOooo I was just wondering what you guys thought about drying fruits / veggies.

Would you rather dry and store local foods, or import fresh foods during the winter????

Nutritionally or otherwise, how damaging do you think an all-natural drying process would be to fruit? Especially succulent fruit.

I'm asking cuz I can get some pretty sweet deals on fresh produce, but only maybe for the next 2 weeks at the most. Right now I can get persimmons for 80/$30, so I wanna take advantage of this deal while i can.

Anything relevent to dehydrating is more than welcome too.

What about Freezing. Freezing works fast for me and keeps it in its Natural State. If I dehydrated Persimmons, it would be as Fruit Leather. When I run into lots of Seasonal Foods at a Bargain.........I O. D. on it until its gone.

Fresh is always the best choice. I wouldn't be able to stick with raw for so long if I ate only locally. I need to be able to have variety available especially my favorite mangos.

As Spicyfull mentioned, freezing is the next best option.
