View Full Version : Alissa's Mashed Potatoes with Mushroom Gravy

I have to admit I wasn't expecting too much from this dish, but I wanted to try it after reading about it here as part of a Thanksgiving menu. I just couldn't imagine cauliflower being anything like mashed potatoes. And I also have a couple of children who have a serious dislike for mushrooms, but I told them I wanted them to try it anyway to see what they thought.

So... we were all pleasantly surprised! I warmed it up so that it wouldn't be cold, and I'm sure that was helpful. And my gravy was too salty, but then again, my husband really liked it that way! And my 12-year old mushroom hater actually ate his too, and didn't complain at all. So I think this will be a recipe we'll repeat in the future, and I am very glad because cauliflower isn't one of my family's favorite veggies and I'm happy to find another way to give it to them.

Just wanted to share in case anyone else had thought about trying this recipe from Alissa's book but hadn't been brave enough yet...

Word to the wise though.....do NOT add garlic to this! I have done it TWICE now (I am a slow learner) and had to throw it out both times. Somehow the garlic reacts with something in the cauliflower and becomes extremely potent. the first time I did use a bunch of garlic and thought I just overkill. The second time I added one clove of garlic, tasted it, it was fine, then put it in the dehydrator for a couple of hours. Mealtime came and we dished up, took one bite, gasped choked drank a glass of water and scraped it off our plates. It was sad because it was tasty when first made. Alissa's recipe does not call for garlic, but I always have to mess with stuff.

Thanks for the tip Katchmoleen. I am planning on making these for lunch and I always tend to add more garlic to things.
