View Full Version : Marinara stuffed peppers

Okay so tonight I wanted a supper that was super quick, involved tomatoes and could be eaten with my hands. I get into moods where I want to play with my food, I want to be a part of the eating process without a fork or spoon in my way. LOL

So... I made my own version of marinara sauce and stuffed a yellow pepper. Put a few pieces of celery on the side to scoop more of this yummy mixture. It was literally dripping off my chin!!!

3 tomatoes - chopped
1 zucchini sliced thin
6 sundried tomatoes

Put sundried tomatoes with a little oil in food processor - pulse till it's tiny pieces.
Add in rest of ingredients. Pulse gently.

Stuff pepper and add some celery on the side to scoop the marinara sauce. Then I sprinkled some celtic sea salt, curry and kelp powder over top. mmm mmmm gooooooood!!!

Yummy and super quick!

As you can all see... I learned my lesson yesterday after posting my fudge balls... so here's a pic for you all.

Oh it was beyond good. I think the kelp and curry powders made it extra special. I was really light on both BTW... normally I add lots of both to anything I make... but not this time and it was perfection!

The only disappointment is I'm so full I can't eat more LOL I'll have to wait to finish it tomorrow.

You're funny, you sound like me. :) I love kelp & curry. Cayenne too.

Normally I would definitely add cayenne - but my tummy still hasn't recovered from the flu I had two weeks ago. Soooo tender - still hurts after every meal - so adding cayenne seemed like a bad idea.

Hi Aleesha, glad to hear that you're feeling better. Ginger and dandelion is very gentle and healing to the tummy. Thought you like to know. :) BTW, the peppers looks really yummy and thanks for the picture!! :p
