I made this today for lunch. It comes out the prettiest cerulean color!
For each serving, combine in a blender or food processor:
1 1/2 cups cauliflower (florets and stems)
1 1/2 cups roughly chopped asparagus (tips and stalks)
corn kernels cut from 1 cob
1-2 cloves garlic
1 tablespoon raw cider vinegar, or juice from 1/2 lime
1/2-1 tablespoon extra virgin olive oil (optional)
While blending, add:
1 cup water
Strain or pass through a food mill and add:
sea salt and pepper to taste
(the leftover pulp can be formed into patties and dehydrated)
Toss in any or all of the following:
raw corn pieces
cauliflower bits
thinly sliced red onion
shaved asparagus tips
finely chopped arugula, parsley, or basil
