View Full Version : 1200-Mile Stuffing

I went to Eva Rawposa's raw-food retreat/vacation in NC a couple weeks ago, and told her the stuffing she made was worth the 600 mile-each way drive and she named the stuffing after my comment!

Honestly, this was the best ever. I just knew it would be good-what with its aroma filling the house all day.

It truly was worth the drive. I'm getting ready to do all the soaking for it...

Here it is, with her permission

_1200-Mile Stuffing_
Eva Rawposa

2 1/2 cups walnuts, soaked
1/4 c onion
2 apples, cored and chopped
2 stalks celery
1 large carrot
1/4 c Easy Date Paste (instructions below)
1 c walnut pieces
3 T fresh herbs (holiday herbs, such as rosemary, sage, thyme, tarragon)
1 t dried marjoram
1 clove garlic
1 t salt
½ t celery seed
2 T lemon juice
1/4 c dried apricots, soaked and chopped

_Easy Date Paste Ingredients_
1 cup dates
With enough water to cover them - per directions below

_Stuffing Instructions, in chronological order for your convenience_

1/ Soak the walnuts for 4-10 hours. Make walnut milk base by blending the
walnuts with 6 cups water. Strain the liquid out using a nut milk bag,
cheesecloth, or even a mesh paint strainer bag. Do not include the milk in the recipe, but set it aside.
(You can add the following to it for a lovely nut milk: 3 dates, a pinch
of salt, 1 vanilla bean).

2/ While the walnuts are soaking, make the date paste. Soak the dates in
enough water to just barely cover them. Make sure to remove the pits, then
blend both the soak water and the dates until smooth and creamy.

3/ Add the walnut pulp (the solid matter left in your milk straining device)
and all remaining ingredients to a food processor, and process until there
are still small chunks only. It should be pretty smooth (because of the milk
pulp) with the exception of some small chunks.

4/ Put small bits (about 2 cm around) straight onto the mesh dehydrator
screens. Dehydrate for 8-12 hours, depending on desired texture._.


_A Note on the Easy Date Paste_ Put this in a container in your fridge to
store. This will last you for 1-2 weeks and can be used as jam on sliced
apples or raw bread, can be used in milkshakes, puddings, smoothies, or
anything else that would benefit from a natural touch of sweetness. Any
recipe that calls for dates can use this as a substitute.

_Tip_ Regarding ingredient substitution. Although walnuts are perfect for
this recipe, you could easily substitute pecans, sunflower seeds (the least
optimal but workable replacement), almonds, or hazelnuts in this recipe.

Hey Mary Kay *waves hello*, you did post it! Nice. :)

LOL, we're not going to have any tomorrow because we already ate all of it.

Soooo glad you enjoyed it! I'm sure I will have this one at Christmas too (or the day before - ha!)

LOL, I don't know how I'm going to even get it out of the D and into the bowl! I'm sure a lot won't make it!

I just printed this one to try soon, stuffing is one of the things that I will really miss eating tomorrow at my first raw Thanksgiving... I haven't had time to prepare a raw Thanksgiving dinner yet because of my daughter's birthday which is also tomorrow, but I may do one next week. It looks great!
