View Full Version : Delicious Blueberry Flax Pancakes from Rawmazing.

We had a "Breakfast for Dinner" potluck tonight, so my daughter made these pancakes and they were very simple and DELICIOUS. Especially warm from the dehydrator. They had a texture more like pancakes than other raw pancakes I have tried, plus most recipes seem to have bananas, and one of my daughters can't eat banana. I would not hesitate to serve these to SAD people. I made ONE change to the original recipe, which called for 1/2 cup ground flax seeds and 1 cup whole seeds. I flipped that around. I don't like digging so many seeds out of my teeth! :D

Blueberry Flax Pancakes

1 C flax seeds (ground)
1/2 C flax seeds (not ground)
3 T coconut oil melted
1/2 C agave
1/2 C water
1 C blueberries
1/4 C coconut

Mix all ingredients. Dehydrate at 145 for one hour, flip and then dehydrate for 30 minutes at 114. Makes 5, 5″ pancakes. These are very filling!!

hmmm i don't have coconut oil (i just realized this) - at least i don't think i do... wonder what i'll substitute??? perhaps avocado.

I like that those pancakes can be prepared the same day instead of dehydrating overnight. Did you pour them on the "griddle" like a standard pancake, or did you have to flatten or spread them to a specific height?

Maybe coconut.....meat (or whatever they call the insides of young coconuts!) or hemp oil?

Sorry to hear you are still sick. Was it the swine flu? Sounds like you got hit pretty hard.

I dunno, my daughter made them while I was at work! From the look of them, I would guess she flattened them and spread them. BTW she tripled the batch, and it made 20 pancakes of good size. We are freezing the rest to take on our trip. I ate FOUR tonight! :eek: The last one really wasn't neccessary!:o

Oh my heavens... this sounds DIVINE!!!!!!!!! I had just been thinking about checking Alissa's book to see if there's a recipe for blueberry "cobbler," which I've been craving, but this would definitely give me a "comfort food/blueberry" fix! Thanks for sharing!!

DRA I get my maple fix by making honey syrup. If you eat honey (I know some vegans don't....don't want to discuss that here thanks!) you just take a cup of raw honey, add 1/4 cup warm water and about a teaspoon of maple flavoring. it tastes a lot like maple syrup. But actually these pancakes were delicioso just by themselves.
