Bread in dehyd

I just now went in to turn the breads I have in the dehyd (Carrot Raisin, Blueberry, and Banana.) The Carrot and Blueberry were firm enough to put on the mesh without teflex. I don't see any advantage in turning a bread that is on mesh. Am I missing something? Thanks for your help.
