View Full Version : Cucumber skin- is it bitter

I made a juice that had cucumber in it and used the skin. It was an organic cucumber but not an English one. The juice was kind of bitter and I wonder if it was the cuke skin. Any ideas?

Yes it can make juice taste bitter/stronger. If you want to lessen the effect, peel it, but skip strips between the peeled strips, essentially peeling half the cuc. That way you get half the benefits of the peel and only half the green taste.

If you make it with other ingredients it should be fine with the skin. On it's own you may want to peel. I've used it in juices and soups and never had any problems with the peel kept on. Could also depend on the cucumber's freshness & type, whether it's organic, etc.

Thanks streetsurfer and Dimond. Now that I know I will counteract the bitterness with some apple or something sweet. I really want to use the skin because I know there's a lot of nutrition there.
