Hi everyone. I have tons of fresh Jerusalem artichokes from my garden, but no idea what to do with them! :confused: Any good recipes?

I haven't had those for a long time. I always sliced them into salads. Sorry, I don't have any recipes.
Are they usually harvested this time of year? I'll have to keep an eye out for them in the stores.

The link is for the artichoke, the flower bud of a type of thistle plant. It and the jerusalum artichoke are both in the daisy or asteraceae family but their family line splits there. Different from the globe artichoke, the jerusalum artichoke, or sunchoke, is a type of sunflower, and the edible part is the tuber or root (looks like ginger), rather than the flower bud.

not very original, but i just put chunks of them in salads...ya know how there is always SOMETHING in your salad that you like the best and go hunting for all the chunks of first? that was these guys for me. i love them. i wish i had some growing :(
also, if you have a vitamix, i wonder about making a mock-mashed potatoes with them. i bet that would be good, but they are kinda crunchy so you probly would need a vitamix to break them down well.

Juliano has a nachoes recipe where the nachoes are just thinly sliced jerusalem artichokes (fresh, not dehydrated) topped with salsa, guac, raw cheese, etc. It's pretty good actually.

Jerusalem artichokes are really easy to grow. My mom started with a few a friend gave her a year or 2 ago, and the few turned into several large containers full, plus more left in the ground for next year. If you have a yard, just put a few in the ground, and they'll multiply. Or if you have an apartment, I suppose you could try growing them in a large planter. Don't know how that would work, though.

I've been able to grow baby bear sunflowers indoors to full bloom, so it should work. Are you saying you can just plant the tuber outdoors or should I search for seeds? My wife found some chokes at whole foods Saturday, so I would like to try it. Do you know if I should put them in the ground now to overwinter like you would with garlics, or wait until spring? I'm thinking presprouting them by soaking for a couple days might be helpful. Thank you much for the idea, and any other planting or care tips you might have for them.

hey bananarama--yeah they actually grow really well here. problem is that i havent yet been able to get my hands on any land at the moment :(
streetsurfer--you dont want seeds, you can just plant the tubers. sorry i dont have any other growing details though.
