I recently made the "Triple Berry Cake" from Heathy/Fairygirl and it was very good. I was craving chocolate, so I tweaked the recipe a little and came up with this.
For the crust -
1 cup walnuts
1 cup pecans
1/2 cup dates
1Tbsp. Cacao powder
process in food processor and press into the bottom of a pan or pie tin. I used a 7" springform pan.
for the filling -
1 cup coconut water (or any other liquid you want)
1 ½ cups cashews
2Tbsp agave
2tsp of vanilla extract
1/3 cup melted cacao butter
1Tbsp thickener such as Psyllium
Mix in a blender until smooth. Make sure the ingredients aren't too cold, or the cacao butter may seize up.
Remove 1 cup of the mixture and set aside.
Add these ingredients to the mixture in the blender.
2tsp cacao powder
2Tbsp Aguave
Mix until blended. Add more cacao if you like it more chocolaty
Pour 1/2 of one cream into the crust, followed by 1/2 of the other cream - repeat. You should have

Or in any order you wish :D
I layered it so that I could marble the filling.
Chill for a few hours and eat - It's SOOOO good!
It's a creamy, light chocolate flavor and the walnutty crust reminds me somewhat of a brownie - what more could you ask for??
The size pan that I used and the amount of cream used, ended up making the crust as thick as the filling. It looked to be about half and half. It seems that the brownie/crust is well balanced with the cream - any more of either and it may throw it off.

My S.A.D. lovin' mom had a bite of this and closed her eyes in ecstacy - though I must confess - she's also a chocoholic :rolleyes:
So, this is S.A.D. approved. :D
Tomorrow I may make some of Ani Phyo's chocolate sauce to drizzle on top.
