It is pricey, about $15/lb, but would be nice for that special meal. I do love wild rice! Here is the response I got from the supplier in response to my question about temp of processing:

Hi Kathleen,

Our rare eaters wild rice is is parched according to the raw eaters
guide lines below 98.6 degrees.

This is an Ojibwe company based in Minnesota, they gather the rice by hand, in a canoe yet. Sounds like the real deal to me.

Im a big fan of wild rice. The nutty hearty taste goes great with rustic dishes. I never knew you could eat it raw though. Learn somethin everyday.

One of the first raw dishes I made was a wild rice and mushroom casserole. It was from KristenRaw and it was divine. I was so disappointed to find out my rice was not raw!

T.O, to prepare it, you just soak it until it is soft. It will still retain some chewiness but I like that.

My daughter made a dish of wild rice and avocado stuffed in mushrooms. She said it was really tasty.

I do not think the parched rice would work. I see it is primarily grown in ponds and small lakes, and I have some of those around here which might work. I do not know if its important for the area to be especially cold in the winter.
