View Full Version : Need a raw cherry pie with raw whipped cream recipe

Hi guys, I'm new on here but I have been into raw foods for about 4 years. I am about 90% raw now for only 3 weeks now. Everything has been going well. I'm looking for a really good cherry pie recipe with some yummy cream for the topping. Kind of mimicking a whipped cream. Anyone have any recipes?

Pie Crust
2 cups raw nuts (almonds, walnuts, macadamia nuts, pecans, etc)
1 cup dates, pitted
1/4 tsp sea salt (optional)
Fruit Filling
6 cups cherries
2 tbs fresh lemon juice
1 cup dates, soaked about 10 minutes
Put the nuts in a food processor, and blend with the S-blade until the nuts are reduced to small crumbs. Add the dates and salt, and blend again until smooth (should look like loose crumbs). Pour into a 9-inch pie plate, and use your hands to press them into the form of a pie crust. Put the pie crust in the freezer for about 15 minutes. Put 2 cups of the fruit, the lemon juice, and the soaked dates (minus the soak water) into a blender and blend until you have a smooth liquid. Put the remaining 4 cups of fruit into a large bowl, and pour the blended mixture over it. Mix it together. Pour the fruit mixture into pie crust.
Whipped Cream
1 ½ cup Walnuts and/or Cashews
2-3 Dates
1/3+ cup Orange juice
Bit of Water
Blend & turn w/spoon until it reaches a whipped cream consistency.
Whipped Cream #2
1 cup young Coconut Meat, chopped
3 tbs Cashews or macadamias, soaked 8-10 hrs
5 dates or 1 tbs Agave
3 tbs Coconut water or Almond milk
½ tsp Lemon Zest
Drop Vanilla

Either frozen cherries or sun-dried and then re-hydrated. I got some GR8 ones from www.rawfromthefarm.com

I've essentially made cherry pies similar to Dimond's. However to make a really RICH one closer to sad, before you pour the filling into the crust, spread it out on a dehydrator sheet for like 4 or five hours, THEN put it in the crust.
As a side note: I had some filling leftover and put it in the fridge. forgot about it for a couple months as it got buried. Found it and lo and behold, it was still delicious. Evaporating the moisture out of it, probably increased the sugar content with what was left, and it preserved quite well. I think the lemon in it, acted as a preservative too.
The kids used it like jelly.

Isn't it though? I've decided I'm going to do the "roasted Tomato Basil Soup, Savory Zucchini Wraps with Squash, Craisins (will use raisins or maybe dried cranberries) and Sage "Cream" and the cheezes for T-giving with crackers I have made.
I'm going to my cousin's where there will be the traditional foods (argh), but I always take MY foods. Funny, only a couple peeps in my family will try anything and ONLY if it's a dessert! Their loss. More for me! YAY!!! :D

Oh thank you! I like the options for the "whipped cream". I think I'm going to use the second one with the coconut. I'm trying to impress my mother n law with some raw foods and get her eating healthy. She loves cherry pie and has a simple cherry pie she makes but with sad SAD ingredients.:) Thanks again! I'm really excited to make this.
