Recipe:
1/8-1/4 beetroot
1/2-1 whole grapefruit juiced
1/4 red capsicum (pepper)
basil (thai preferably)
1/2 avocado
1/4 stick of celery (opt)
Blend till desired consistency
Pour over peeled zuchinni's!
Who says lowfat raw isn't creative! :)

Oh dear I forgot sundried toms in that mix, also sundried red pepper is best for flavour :)

I love everything except the beets. I simply detest beets. Any ideas as to what would make a good substitute? I want to get more creative with vegetable salads with my family.

That's funny because I too do NOT like (never did) beets, but I've had them like angel hair pasta thin in a salad and they were do-able! I think w/the other flavors this will be really good! I'm gonna give it a try!

OK as one beet hater to another, you can let me know if it is good! It is one of those things I have tried numerous times, thinking, "I probably have outgrown this by now......it is so nutritious, I SHOULD like it...." But to no avail. I still hate it!

There's someone at my local co-op that sells Chocolate Beet Cake, I'm betting that would be a good way to sneak beets into your body.

Another way I can tolerate them is to juice them and mix w/other juices...like carrot or apple or use as a base for a smoothie...have you ever tried that? Adding lemon also "disguises" the taste.
They always tasted like cans to me and growing up I would NEVER even think of eating a pickled one! ARGH! That makes the hair on my arms stand up even thinking of pickled beets!
Now about that chocolate beet cake! Care to share the recipe?

1/2 an avocado!! All that fat! (just teasing, looks like a great recipe, I'll have to be open-minded and try peeled zuke again :p)
