I made some carrot soup out of "Rainbow Green Live Food Cuisine" yesterday and did not care for it. Not wanting to waste it, I put it in the dehydrator, thinking it would make like a carrot leather. To my surprise it actually made a delicate cracker/cookie. I ate some, really liked it, ate some more, and knew it reminded me of SOMETHING from the SAD old days, when my 8yo daughter said, "These taste like fortune cookies." That was IT! No added sugar either. I really do think they taste like fortune cookies, but a couple of my kids don't, so your mileage may vary.
3 carrots, chopped (I used big ones, around 8 inches long)
2 stalks of celery (I used smaller ones, about 6 inches long)
2 cups almonds (mine were blanched)
2 cups water
1 1/2 cups orange juice
1/4 teaspoon nutmeg (the recipe called for a full teaspoon but I thought that was too much for a savory soup)
Blend in blender till smooth and pour on teflex sheets, then dehydrate till crisp.
NOTE: the recipe did call for 2-3 cloves of garlic. I used ONE clove and it still tastes like fortune cookies! So you can decide if you want garlic in your cookie. :D
Using the blanched almonds makes them come out a very pretty bright orange.
I did not try to fold these and put fortunes in them. :)
