Try This:

MY Cashew Cup Fudge recipe:

First make cashew butter:

2 cups raw cashews
4-6 Tbsp canola oil (add more if needed)
1/2 tsp sea salt

blend all in food processor until creamy and set aside.

next Cacao Fudge:

1/2 cup Raw Cacao Powder
1/2 cup Coconut Oil
1/2 tsp vanilla extract
1/2 cup grade B maple syrup

mix all together in bowl. Now take small luncheon size plate and rub with oil. Your first layer is the Cacao Fudge sauce ( use half of the sauce), then set in freezer for few mins to stiffen up. Next spread thick layer of the cashew butter and put back in freezer for few mins. Then pour rest of the fudge sauce over cashew butter. take some raw cashews and chop up and sprinkle over top ans put in freezer for 10-15 mins and it is ready.

Remember, this has to be kept in the refridge at all time because it is REAL and HEALTH and doesnt have fake stuff to keep it from melting. Looks like a Reeses Peanut Butter Cup! LOL

Sounds very good, but I personally would not use canola oil to make cashew butter.

I am allergic to cashews, so I would substitute it for almond butter.

this sounds delicious. i'd substitute a cold pressed oil though. also, i don't understand the concept of using cooked ingredients in 'raw' recipes (ie maple syrup...and half a cup is a lot)... isn't the resulting product then cooked? what are people's thoughts on maple syrup and why is this cooked product used in raw recipes? i went to a raw restaurant the other night. i ordered a slice of raw pizza, cake and flax crackers (miniscule servings, but delicious) and paid $26 (take away). the cake was probably the same size as a small mobile phone. as she handed me the bag of food, she said there was maple syrup in the cake. i don't understand why when so much effort goes into making raw food and raw being the idea that sets this way of eating apart, why a cooked product is so freely used. i ate it anyway. i'm not judging anyone, but am just very interested in people's thoughts about this...ie why is it okay to use or why they don't use it. :)

Some of us use maple syrup, honey, nama shoyu and other things that are not raw but are used in small amounts and really can't be replaced and are important to the recipe. Its a choice you make. You don't have to. I like gourmet uncooking and some of the recipes just wouldn't work without it.

There are no raw police.:)

I agree with Snoops. Although some of the products may not be 100% raw, they are however natural.

Glad everyone likes the recipe. It's...sometimes we have to choose a little not so "raw" every once in awhile for our recipes. look at my coconut ice cream recipe. YUM!!
