I saw on a youtube video a container of raw agave. The person preparing the recipe said that raw agave is always clear and the non raw agave has an amber or even brown color. I went to the store today to get some more raw ingredients and found a container of raw agave, but it was a really dark amber color. :confused:

Im sure that agave can come in all colors but you have to make sure it says raw. I even used to order some from alissa cohen and one time it came in a light color and then another time it came dark (and of course it is suppsed to be raw). I think it also depends how long one dehydrates?:confused: There are different types of agave and even some "raw" agave claim to be raw but are heated at high temperatures. i suggest you search online for truly raw agave but still since there are types of agave they make come in different shades

Here's some alleged truly raw agave. Agave, I believe, is heated above what one would deem raw friendly temps, so indeed only the clear stuff is truly raw... maybe. I can't say for sure trust nobody.
The brand is Wholesome Sweeteners. It is called Organic Raw Blue Agave. (it has a little thing at the bottom of the label that says Amber)
I read the back of the bottle and it says it is produced at a low temperature (less than 118F).

It sure does give me pause to think about using agave just because it is raw. Does anyone have any more info on this?

I don't get very hung up on raw or non-raw for ingredients such as agave. I use so little that even if it's not raw it's not going to hurt me. If you are using it on a daily basis, then it might be an issue.

Word, I don't know which is better between agave and maple syrup but I prefer maple syrup, I don't think a bit of either is gonna make or break your rawthugstyle.
