View Full Version : Substitute for barley in Alissa's chili?

I want to make Alissa's chili this week and I see it has barley in it, which I cannot have due to the gluten content. I know I can try some sprouted buckwheat or quinoa or something, but I would like to hear if someone has actually already done a substitution and had it turn out well.

How about sprouted wild rice?

Or just more corn?

I haven't found any raw wild rice....otherwise that would be an excellent suggestion. I think the sprouted grain would add some nice chewiness. I just want to know what people have already actually tried.

Any or all of these: Almonds, carrots, mushrooms, celery, red bell pepper.

Soak the almonds 4-6 hours. Pulse almonds and carrots in food processor until a chunky consistency is acheived. Finely chop the mushrooms, celery, and red bell pepper.

I've made it twice before. Once I used those mixed sprouted beans that you can buy in any grocery store (usually next to the little packages of alfalfa sprouts).
The second time I made it, I used nothing! Just added more corn, peppers, etc...
Both times it was fantastic.

Or "riced" jicama. It has more of bland flavor and will pick up other flavors better than cauliflower.
