I've never made flax crackers before. I found a recipe online that looked good, so I planned to make it. It said to soak flax for one hour or overnight. Well, I got busy and didn't get around to starting to make the recipe until the flax had been soaking in a bowl on the counter almost 24 hours.

I'm not sure if the smell is yeast growth or the beginning of fermentation, or just normal flax smell.

I went ahead and added all of the veggie ingredients and put the mix on trays and am dehydrating, but should I be worried about eating them?

I have found that flax can go rancid pretty fast. You can still eat it, but it will have a funny aftertaste.

Do the crackers themselves go rancid? How should I store them?

I find they are best stored in the freezer if they are not going to be eaten within a day or so. They can be eaten right out of the freezer.

Flax DEFINITELY has an odd odor...

I have stored mine in the freezer before and they were alright for quite a while.

So, are they not a good snack to pack for traveling? I made them to take with me on a two week trip.

Oh yeah! I'd take them! Put them in a sealed baggie. I personally think they will be fine!

:::Whew::::

Thanks.

They smell great now, just flipped them.

I'm also making veggie chips and potato chips.

AWESOME. Something else that travels well? Green smoothie rollups. Make a (thicker) GS and them prepare like the fruit rollups...spread onto the teflex sheets and dehydrate until you can peel 'em off...these are really good.

Wow, I was thinking of trying to do something like that, awesome!

So, being gone for two weeks, should I be concerned about refrigerating or freezing any of this stuff?

The crackers will keep as will the fruit rollups. Thinks that won't would be like the pates and the "wetter"recipes.

How long do you dehydrate rollups?

I'm excited.

Like 14 hours or more. Like Alissa's crepes. Peel and see if they peel easily if not go for more time...
