My DD is really into reading Gingerbread Man and we have been reading all different kinds of versions of it mostly to keep my sanity. It is interesting to see how the one we started with was very simple using raisins and currants to others that are all sugary looking.

Anyway, I would like to do an activity where we make Gingerbread man and put in the dehydrator instead of the oven :-)

However, I am still not giving DD nuts yet. Recipe without nuts? I searched old threads and found ones with nuts.

THanks

I'm wondering about the squash waffle recipe (I'll find it and bump it) and use sunflower seeds instead of the nuts? OR any of the recipes you've found have you considered subbing nuts with sunflower seeds?

I bumped the squash waffle recipe and it's a good, sweet kid friendly recipe...I'd add ginger and cinnamon (to taste - start off with a teaspoon and add more). it's a good recipe and would hold the shape of the ginger people...you ARE gonna have ginger women right? not just men? LOL!

If I am not mistaken there used to be a recipe on here for gingerbread people using ground flax seeds and not nuts. I made it two years ago for Christmas and it was really good and authentic tasting. I will try to find it.

I make ginger snaps all the time for me and my brother using coconut. you can use either the pulp from making fresh coconut milk (i live in FL so i get coconuts FREE!) or use the shredded dehydrated kind. Grind it up really fine in a coffee maker or vitamix. Mix dates and yacun syrup (or other sweetener, but the yacun tastes like molasses) with some lemon juice and/or peel, ginger powder and a pinch of salt, then mix in the ground coconut. Roll out on parchment or teflex and cut into cookie shapes, then eat as is or dehydrate

sooo yummy!

Veganforlife ~ YOU TOTALLY ROCK!!!! or better yet - YOU TOTALLY RAWK!!!!! Thank you for that link!

Babeak ~ Thank you for posting your request. I have been gingerbreading since my DD was 3 (she is now 14) and every year we have made at least one gingerbread house from scratch. This year is no exception but I am wanting to try my hand at a RAW gingerbread house. Been wondering what to do for the basic house. My imagination is having fun with all of the decorating goodies and now I think I can tackle the house part as well.

Gingerbreading with kids is soooo much fun! It will be even more fun when it is healthy!

I was just going to make the squash waffle and IT HAS NUTS!!! ALL of the other recipes do to!!!! AGH!!!! :-(

I don't have time to experiment a whole lot like I used with substituting things for recipes when I became a vegan. I have a toddler and just getting dinner made is sometimes a challenge.

I NEED nut-free recipes!!! Just frustrated.

We had a great kale avocado salad tonight and it took forever to prepare, but it was really good.

I often use oat flour as a good sub for nuts. I soak, dehydrate and then grind into a flour. I also use (4+ days) soaked oat groats, damp thrown into a recipe.

Un-soaked or briefly soaked oat groats will have a uncooked floury taste & consistency. Soaking several days makes them sweet and yummy also more digestible!

As the oats do not have the fat content of the nuts add back in a bit of coconut oil to balance your chosen recipe out.

Cheers,

EPPP
