This recipe was in an email from Vitamix. I would love to have your suggestions on how to incorporate it into a meal or an appetizer.

Cranberry Relish Sauce

Yield: 2 cups (480 ml)
Speed: Variable
Time: 10-15 seconds

Ingredients
1 orange, peeled, halved
1 cup (96 g) fresh or frozen cranberries
1 apple, cut in quarters
1/4 cup (50 g) sugar or other sweetener, to taste (I would use agave.)
1/3 cup (33 g) walnuts or pecans (optional)

Directions
1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and quickly increase speed to Variable 4. If necessary, use the tamper to press any ingredients into the blades while processing.
4. Blend 10-15 seconds or until chunky.

I just thought it would be really good mixed with baby spinach too. Or as a "jam" on crackers.

I would serve it as a Salad on a Bed of Greens, especially with Thanksgiving around the corner.

I tested the recipe this morning. I didn't have a full cup of cranberries. At $10 a lb for organic cranberries I only bought $1.60 worth.

I used the food processor instead of the Vitamix. It tasted kind of plain and boring. The addition of cinnamon enhanced it greatly. I ate half of it with a spoon right out of the processor.

The other half of the sauce went into the Vitamix with romaine, water, one date, and another sprinkle of cinnamon. Made an AWESOME smoothie!
