Quick! Please help?

What is the finished "Eggplant Parmesan" (Alissa's recipe on page 402) supposed to look like and what is the texture of the eggplant itself supposed to end up like? It tastes just wonderful, but I don't know if it is done.

If it tastes wonderful - then it's done...:D
Any and all of her recipes don't have to be dehydrated, but can be. With the exception of the obvious ones, like fruit leathers, pizza crusts, etc.
I say if you like it - it's done enough.

Thanks for your comment Vfl. I will likely check it after 14 hours next time and slice the eggplant even thinner. And that photo looks so good but not at all like what I made today. Different ingredients. Different recipe I guess. I used Alissa's.:)

Wow- I have not been here in months & I saw this. Yes, I made this for Valentine's Day a few years ago & it is indeed Alissa's recipe. I remember I made it in the morning & dehydrated all day. It was super yummy. :)

Hi VFL- Waving big-time back. I've been away forever-working the shop & something said I just needed to come online tonight when I saw the pic of my food. How did you find it as I must have made that 4 years ago. Nice to see EPPP is posting tonight as well. Thanks for sharing my pic.:)

I did a search for eggplant parmesan. Then noticed the ones that had the little paper clip icon (meaning there's a photo there) and clicked on the photos. It literally made my mouth water!

Sweetie, please forgive me!!! I was NOT ignoring you...I've been so busy, my head is spinning off!!!!

Here is my Eggplant Parmesean from Alissa's book:

It depends on how thick you sliced the Eggplant and how thick your layers are. I only made mine 2 layers thick...pretty Thin layers...and dehydrated it most of the day. Your 19 hour estimate actually sounds about right. I'd make it early in the AM and it will be ready by 7-8:00 PM.

I would also just taste it...mine were NOT crunchy... VERY soft and delicious!!! Alissa says in the book to make sure you soak them well and add enough oil on the bottom layer. I DEFINITELY found that to be the difference in how mine turned out...
