OK, in a moment of pure impulsive spending, I bought 5 lbs. of cacao nibs (they were on sale!). I just kept hearing how great they are, and now I have them and don't know what to do with them except put them in smoothies and ice cream, which is nice, but I'm wondering if anyone has any ideas or recipes?

MMMMMmmmmmmmmmm..... I LOVE CHOCOLATE!!! :) Is cacao nibs better than carob powder as far as taste? And which is easier to use? Seems that if you need so much to taste it, perhaps it's better to use carob powder? I've never used either, but I almost bought carob powder the other day. I decided to wait - since I'm so new to raw foods - till I purchased Alissa's cookbook and actually started making some recipes! hee hee ;)

Alissa,
Thanks a million for that link. Very informative. Answered all of my questions. Carob, it is (for me)! ;) I don't need that jittery feeling - I've had that all of my life from asthma meds. No thanks!

Alex (rawguru) posted a delicious chocolate truffle brownie recipe on the rawfoodsupport.com forums a while back. They are really good. I have to say, the cacao makes me feel a bit buzzed, though...

After reading the thread that Alissa posted I am thinking...well, now what the heck am I going to do with five pounds of these babies ?!? LOL
Actually, they do give me a caffeine buzz, but not like what Alissa described. Then again, she's probably a lot "cleaner" than I am and more sensitive to these things. All I have to say is good thing I have a big freezer! I'll just use them slowly till they're gone. Like in the next ten years...

You guys may like them i just didnt care for the 'buzz' it gave me. I dont think eating it once in a while is going to really hurt you but i dont think its the 'best raw food of all times' as some preach :p
I prefer carob and make the best chocolate from that so i dont miss it at all.
1-cup coconut oil
1-cup carob - (make sure you use the powdered kind and not the grainy kind that most people sell, it makes a huge difference. you can get this from jaffee brothers or me very soon)
2 T agave liquid
Blend and eat, this is so good!!! Just like the chocolate being sold now.

Melanie,
By the way, thanks for the recipe! I have an idea of what you can do with all your "nibs". Find a recipe you can use them in (something like raw chocolate truffles if there is such a thing???) and make up a huge batch. Package them up in holiday wrap and give them away for Christmas! Then you won't be stuck with them for ten years! LOL. :D
If you find a recipe for raw chocolate truffles, let me know and I'll give you my address! LOL!!!

Yeah, ok, 10 years might be a little of an exaggeration. :) If I can stay raw for 10 years, I deserve to eat 5 lbs. of raw chocolate!!
This is a GREAT idea for Christmas gifts. I'm gonna do it!!

MelanieLMAO .... I do miss chocolate.
I'm glad you liked the idea. This holiday season is going to be very interesting. Not "pigging out" on the traditional Thanksgiving feast will be a huge challenge for me. :( Then there's Christmas where every year I'd make homemade cookies and my Kahlua Truffles that everyone expects and raves over. They were so much fun to make - one for them, two for me, one for them, two for me... until I couldn't count (or stand) anymore! ;) I revised the recipe so that there was significantly more Kahlua in them then any other recipe I found. LOL. Yes, it's going to be different.
I'll have to come up with some raw recipes to give out. On the bright side, I won't have to buy all that disgusting white flour, sugar and butter. And I won't have to fire up my oven. Hmmm..... it just may end up being a less stressful holiday season. At least I hope so! :) Best of all ... I won't pudge out over the winter months. YEEHA!!

Hi All Raw Friends,
Just wanted to let you know that I made Alissa's chocolate candy. It is great, but I used honey, carob powder and coconut oil. Added some pumpkin seeds, walnuts, raisins. It was fabulous!
Thanks Alissa! :)

I also made Alissa's raw candy yesterday! It was delicious...and Matt is in candy heaven over here. However, today I can't stand to look at anything fatty or oily... Guess I've been overdoing the fats lately.
