I just ordered a bunch of nuts and am wondering the best way to store them. Should I freeze them first and then soak/dehydrate when I am ready to eat them or visa versa? thanks!

Your choice.
I just did an interview with Jackie Graff and she told me she will soak and freeze as well as soak, dehydrate and refrigerate. I usually purchase and freeze but, I like the idea of having already soaked nuts available for when I want to create something.

Water expands when frozen so it'd seem to DopeRaw that it'd be better to dehydrate before freezing so as to not denature the nuts. Iunno.
What I do is soak, dehydrate and refrigerate a big bag's worth - 2-3 pounds. Then I keep another 'big bag' (same size) raw in the freezer.
This way I've got my stash ready to use and another back up because I'm not a fan of running out of stuff. *Ü*
