View Full Version : Raw Deviled Eggless "egg" Salad

Serves 4-6
½ cup pure water (start with less add more)
Juice from one lemon or lime
1/4 tsp garlic
1 ½ teaspoons sea salt
1 ½ cups raw cashews
1 Tbsp organic yellow mustard or spicy mustard for a kick (I use mustard powder)
1 - 1 1/2 Tbsp dill (optional)
1 Tablespoon apple cider vinegar
Turmeric, as needed for color (approx. 1 teaspoon)
Place the water, lemon juice, garlic, sea salt and cashews in Vita Mix, and blend until very smooth.
Place mixture in a medium sized mixing bowl.
Stir in the mustard, apple cider vinegar, and turmeric until it reaches the color and flavor you desire.
You can add celery and red bell pepper.

I make this all the time and add finely chopped cauli and celery. Yum!

I bought some mushrooms to make this bc I'm allergic to cashews...can't get past my mushroom fear. How do I tell if mushrooms are fresh & bad?

and was included in their Holiday menu ebook a few years ago.
If you don't want to use cashews, you can substitute pine nuts. They have the creamy texture.
I can't imagine it working with just mushrooms, but I'll be looking forward to a report.
If you're not using vinegar (good for you), you can just leave it off and it'll be fine. The mustard adds enough spice.
This is great, by the way, with onion bread. It's quite runny, but hey, if it doesn't get all over your face ... !

Definitely. I especially liked the timeline that they included.
The year it came out, I divvied up the recipes amongst my relatives as sort of a already-assigned-potluck Thanksgiving. Nope, they weren't raw, but good sports nonetheless. It was a great meal. Being non-raw, though, several of them experienced that "cleansing" reaction that a meal of all raw foods can bring to the SAD-eating bodies. Hee hee. Nonetheless, at different points, my cousin, my mom, and my son eventually gave all-raw a try.
Now that we've mentioned it, if anyone doesn't know what to do this Thanksgiving, I'd suggest getting that e-book. It's a winner (though they're definitely eating-for-entertainment recipes, not eating-for-optimal-health recipes!).

I made this a few weeks ago, put it on top of a huge salad, then topped that iiish with capers.... OMG it was delightful!!! Now I know EXACTLY what I am having for dinner tonight!!!
