OK, I made onion bread for the second time. I'm experimenting with technique (slicing or grating the onion?, for instance). I think it's very tasty stuff. I will say, that I've only eaten it as itself.

How do you eat your onion bread?

I schmeared it with raw hummus! Next will try Alissa's mayo, tomato slices and sunflower sprouts.

Can't answer your other question yet, bought my onion bread. Pretty tasty stuff but pricey! Looking forward to making it soon as my Excalibur arrives.

I usually just eat it as is - but a couple of times I've used it as a pizza crust - oh, it's so good!

On a side note about the onions... I slice them using the thinnest blade on my food processor and then I mix up the batter in my stand mixer letting it break down the onions by mixing. Works for me. *Ü*

actually i've only made it once and it turned out horrid... i suppose i should try it again sometime since i hear such great things about it.

I like the onions sliced. If any large pieces get through I pick them out and chop them with a knife.

Favorite way to eat it is slathered with mayo (blended pinenuts and/or macadamias, ACV, garlic, sea salt) and topped with micro greens. With or without a slice of tomato.

I've also shaped it into a tart shell, dehydrated it and filled it with Alissa's calzone filling ingredients.

Then there was the time I used two tart shells as a bun for a Portabello mushroom burger.

Sometimes I cut some small pieces and leave them in the dehydrator longer until they are crispy crackers. Good for croutons on a salad.

Plain is good, too. :)

I saw some on the interwebz for $15. Four pieces. I made a lot! for a couple of dollars. I shared this information with my husband and he said "You need to go into the raw food business." Ha. I told him that two years ago. He did not believe me.

Get your dehydrator! I couldn't afford an Excalibur, so I got a Nesco (with temp control, but no off switch or timer) and I'm happy with it.

More often than not, I tend to munch on it by itself or have a piece or two with salad or soup. A couple of times I've made a sandwich with the bread with pesto, tomato, lettuce and whatever else I have to throw in, like sprouts, cucumber sliced thin and long, carrot sliced the same way, and red bell pepper slices. Or a fast version is just one slice with pesto and sprouts sprinkled on top, or even faster --- one slice with some lettuce on top, folded over into a mini sandwich.

I actually pulse my onions so they are finer, makes for easier scoring of the bread, then I do make it into big squares on the teflex sheet.

I like to eat it with smushed avocado, tomatoes, and sprouts! Making my mouth water right now.

It's so good. AND it freezes GR8!

It's good with this too:

Serves 4-6

½ cup pure water (start with less add more)
Juice from one lemon or lime
1/4 tsp garlic
1 ½ teaspoons sea salt
1 ½ cups raw cashews
1 Tbsp organic yellow mustard or spicy mustard for a kick (I use mustard powder)
1 - 1 1/2 Tbsp dill (optional)
1 Tablespoon apple cider vinegar
Turmeric, as needed for color (approx. 1 teaspoon)

Place the water, lemon juice, garlic, sea salt and cashews in Vita Mix, and blend until very smooth.

Place mixture in a medium sized mixing bowl.

Stir in the mustard, apple cider vinegar, and turmeric until it reaches the color and flavor you desire.

You can add celery and red bell pepper.

Oh you're right VeganForLife -- avocado! How'd I forget that! One of the yummiest things I like to slather on onion bread (instead of pesto).
I too freeze my onion bread (make a double batch at least). I put about 8 pieces in freezer bags and take a new bag out of the freezer each week or two, whenever I finish a bag.
My kids like to just munch on them too. The first time my daughter tried it she didn't like it, but then she'd see me snacking on some and ask for a bite. Now she requests it. :)

OK. Today I'm packing my lunch to go to work with me. I have some kimchee (based on Alissa's recipe), a portobella cap filled with guacamole, some cherry tomatoes, a piece of onion bread and a couple of oranges. I will probably explode, but better to have too much with me than not enough. (c:

My next batch of onion bread I'll experiment with pulsing the onions into finer pieces. So far, I've liked every batch I made, so it's not like I'm complaining.

i made it once and didn't really love it, but i went to a raw class (w/ an alissa certified instructor) and he made it and the raw hummus and it was yummy.

Going to have RAWvolution's untuna on it for lunch today with spring mix and ugly tomato slices.

I also love Alissa's 'swiss cheese' on it with sliced tomatoes. My fav!!

I usually eat it with almond butter and a little agave - my version of a P&J sandwich! It is delicious - to me at least:p

With avocado or guacamole, like chips...definitely the best.

Also love making avocado, tomatoes, lettuce sandwiches with it.

I eat onion bread as much as possible as often as possible, and usually just eat it by itself while trying not to die of ecstasy!
