Hi there,
I rarely have access to young coconuts. I have one right now that I bought while traveling.
I know there are quite a few young coconut recipes on this forum. But I am asking for recommendations for your favorite young coconut recipe.
Or maybe I could put it this way..
If you only had one young coconut for the year (which is my situation) what would you make with it?

I'd crack it open, drink the liquid and probably mix the insides with frozen bananas and fresh papaya and do a take off on Alissa's banana/papaya pudding.

I'd probably eat it with a spoon, forget the recipes. (c: But I'm kind of like that.
I heard John Kohler (grow your own greens guy) mention that he has dehydrated the coconut meat. OH MY GOODNESS - I've done it twice now, seriously dangerous!! (can't eat just one...) *Ü*

I'd probably drink the water and eat the meat out of the shell with a spoon. :)
Then the next year I would put both water and meat in the Vitamix with a cup of cashews (presoaked two hours), 1/4 cup sweetener of choice (agave, honey, or maple syrup), juice of a lemon, 1-2 Tablespoons of coconut oil, and seeds from a vanilla bean. Blend it until smooth. Add more cashews if necessary to make it thicker. Put in the fridge overnight to set up. Makes about 2 cups of pudding. Enjoy it with berries on top, or as a dip for slices of mango or banana.

I'd be afraid of doing anything but eating it straight.
A simple recipe that doesn't go far beyond eating it straight is to blend the meat and the water together for coconut milk.

I see many of you are fans of young coconut straight up. Maybe next time.
Vegan for life -the coconut banana papaya sounds truly good,:p but I will have to pass until I have access to a papaya and a coconut...
Raw Knitster, I think I will try your cashew/agave/lemon/vanilla might be the one since I have access to all the ingredients and it does sound yummilicious!
Thanks for the tips on opening it, too.:D

Ani Phyo has a Coconut Jerky recipe that is easy and indescribably delicious!
I will try to post it from memory:
Place strips of young coconut meat on a dehydrator tray with parchment or teflex sheet.
Brush with olive oil and Bragg's or nama shoyu
Dehydrate until desired consistency is reached.
Makes a wonderful snack that is easily transportable.
