How do you dry coconut so you can shred it? I have tried to dry it but it becomes rubbbery and hard to do anything with.
Help!!!

I peel the Brown Skin off and Shred it with a Mandoline.

Thanks for this link! I have never been successful getting these open, and this method is new to me. I would love to be able to do this.

I peel the Brown Skin off and Shred it with a Mandoline.
I've left the brown on lots of times and "grind" it in my VM or FP...

I like to open two brown coconuts and scrape out all the meat, then put it through my food processor shredder, then mix with a bit of agave and dehydrate in my excalibur. Once it's all dry, I store it in the freezer in glass mason jars. That makes the absolute best shredded coconut!

Do you get any coconut water from the brown coconuts? Showing my ignorance - again!
