I've got an acorn & butternut squash....what do you do with these raw?
I'd love to hear what others suggest, as I have another butternut squash I'd like to experiment with. I did this with my last one: http://rawepicurean.net/2008/10/26/walnut-cranberry-squash-rice/
It was sooooooo delicious. I would have scaled back a bit on the cumin though.

I slice thin with vegetable peeler and put in salads. More palatable that way than sliced regular way.

Yes! Slice long-ways with a vegetable peeler into wide fettuccine-like noodles. Sprinkle a little salt and olive oil on them, rub it in, let sit for at least a few hours and voila! Delicious noodles. Use with marinara or pesto sauce.

In Gabriel Cousen's book Rainbow Green Live Cuisine, he has a recipe for Creamy Yam.....Something. I plan to do a trial run for thanksgiving, but imagine it would be good with squash too.

Coconut milk, cloves, cinnamon, squash, blend well - taste like pumpkin pie!
Slice thin and use like potato chips! Even my SAD friends like these!
