I think I might have just found my new favorite green! I have never bought kale in my life until the other day and I just worked up the courage to try it. I put it in my brand new food processor and chopped it up and ate it with a bit of raw tabbouleh...Oh wow, it was sooo good! I also tried a bit just off the leaf and ate a stem too, how delish :D Yum!

I did get a food dehydrator along with my new food processor/blender combo and plan on making a recipe for kale chips that I found but what are some other good recipes for kale?

There are some wonderful recipes for kale salads and for kale chips. You can make those in your new dehydrator---they're quite yummy.

I like a little kale in my smoothies too.

I like to marinate kale in lemon juice with chunks of tomatoes and then dehydrate.

Great kale recipes from Alissa's book:

Kale Salad Pg 456

Marinated Greens Pg 301 using kale

Join me in the Food Section, Recipes area, Alissa and Annie thread where I am working my way through every recipe in Alissa's book. I have given a review of each of the above recipes.

Careful with the kale everyone, it tastes great and is full of nutrition but contains goitrogens that can harm your thyroid. It's best to limit kale and other cruciferous vegetables to 1-2 bunches per week.

I'm sorry, but I disagree. My thyroid is fine (now) and I eat kale daily. I think when one eats a SAD/CRAP diet this is true...I have had no problems eating kale, cabbage, all the veggies that claim to be not thyroid friendly...

:D

It does however affect my teeth. I'm forever having greenies stuck in between! LOL!!!

I just love kale in my green lemonade smoothies. In fact, my entire family does and I have four children ages 5-12.

That sounds REALLY good. I'm on a lemonade kick lately too. I'll have to combine 'em! Thanks for the idea!

Veganforlife, what do you put in YOUR lemonade? I put lemons, banana, kale, green or red chard, parsley, (and sometimes spinach) and flaxseed in mine. Look forward to hearing your response.

Hahahaha! Actually I've been drinking water, lemons, and agave, but lots of lemons...never thought to add other veggies cuz to me then it becomes a green LEMON smoothie!

I love it when the green star get a hold of the spine and just sucks it all up. Gotta be its favourite veg. Really dark green, must be one of the best things you can eat nutritionally??
