I don't know why we don't have a word for a late lunch/early dinner like we do "Brunch". But I tend to think that the 2 goofball possible words of LUPPER and LINNER are probably why we don't have a special word ... :p

My brother is coming over later this afternoon towards evening but he'll be coming for LUPPER [L(unch)+(s)UPPER)<g>. I've promised I'll make a side dish or two but, as always, am undecided since all the recipes I've been looking at call for a ton of ingredients most of which I don't have.

However, I have enough to make a simple salad. So I thought I'd ask what you all are having for lunch or supper today. Seeing what everyone else is preparing might give me some ideas for a second side dish, hopefully. <g>

What do you have to work with? What kind of salad ingredients?

-A zucchini hummus with fresh vegetables.
-A batch of guacomole and salsa and serve with cabbage or lettuce leaves.
-Marinate fresh spinach, mushrooms, onions, fresh basil, and sweet bell pepper in a little olive oil and tamari.

Onion dip. It is just blended cashews in water with some chopped onions added after. Serve with cucumber or carrot slices.
Rawbies seem to love it.

If you want a simple salad, try Alissa's Honey Mustard Dressing. It is really, really good!

I made it last week for un-cooking my way through Alissa's book (see the thread Alissa and Annie) and I love it. It is very easy and keeps for several days. It has become a staple!
