Aleesha, you are a strong woman to talk potluck while juice fasting. Tipping a glass to you. CHEERS! Your juices sound delish!

I would love to share my squash waffles! They don't look like much now. I need to get them dressed in some party clothes. How about raspberry sauce and cashew creme? Or maybe someone else could bring the maple syrup.

Yep, Kat's link is the recipe that I used. Only I doubled the quantity of squash, dates, and flax. I used a very mild tasting white acorn squash.

I ate them with agave syrup. Really, REALLY easy and DELICIOUS!!!

Here's the recipe I created:
1/2 cup cashews
3/4 cup macadamia nuts
1 cup cubed squash
2 tsp sunflower oil
4 soaked dates
2 T golden flax seeds, ground
vanilla
pinch of salt

Process nuts, squash, soaked dates, and sunflower oil in a food processor until dough like. Mix in ground flax seeds, vanilla and salt. Try not to eat the dough already!Yum, that is fabulous! But, phooey, I don't have a waffle iron lying around!

All you need is a removable non-stick waffle iron grid. I only used one grid. The other side of my waffles is smooth. I made balls with the leftover dough and smashed them with a fork. These "cookies" tasted almost the same, but the waffle grid definitely has visual appeal and makes a difference in the perception that you are eating waffles.

Great idea. Now the question is hunting down one of these without buying a whole waffle machine which isn't needed.

Any ideas on where to go for something that will do the trick without spending on an entire appliance we won't use? :)

That is the $50 question. Borrow one? Try second-hand stores or a shop that repairs small appliances. Perhaps there is a broken waffle iron to be had that doesn't need it's grid anymore. Good Luck!

Veganforlife has the right idea. Goodwill, too. I'm leery of electrics from places like that, but you don't care if it works or not, right? As soon as I get through the recipes in Alissa's book, I'm going to make this.

Never thought I'd be looking for an electric waffle iron (though it doesn't matter if it works or not, of course <lol>)!

No. The actual grids are removable. the electrical part is in a closet collecting dust. LOL!

OOOOOOO I musta hava different kind. Hahahahaha I picture my dehy full of elctrical appliances...hahahaah. I think it would freak out and get an identity crisis!!! Not know which end is up and what it is posta do now?????:D

Yes! It is an out of this world waffle experience. But don't forget to add the ground flax seed. It gets added in at the end of processing. Last time I forgot and the waffles cracked. I smooshed them back together, but they had to be overdried to come off the grid and out of eight waffles I got one whole, hard waffle. Nothing went to waste though. I ended up with a bag of delicious bits of crackers.

Moral of the story... Flax is the binding agent.

WOW WOW WOW - the batter was awesome and my house smells sooooo good right now. Can't wait to try them.
