Can you please post your favorite raw cookie recipes that are dehydrated or don't require refrigeration to store?

Savoy Truffles
(2 dz small balls or 1 pan)
2 cups ground almonds (food processor)
Combine the almonds finely ground with:
1/2 cup carob/cacoa
1 cup shredded unsweetened coconut
3/4 cup agave nectar
2 Tablespoons olive oil
Mix the dry ingredients.
Add the others
Roll into balls + more coconut
or
press into bars in glass pan
+ freeze briefly

2 pounds apples cored and peeled
1 cup agave
1 3/4 cup almonds (grind)
1 1/4 cup raisins
1/4 cup raisins
Shred the apples. Add the rest of the ingredients by hand and mix.
Makes about 20 "patties" thick on teflex sheets.
Dehydrate approx. 24 hours.
This and the previous recipe comes from Matt Amsden's book "Rawvolution"-a great book with simple raw recipes!

well....... i made this one up after craving chocoloate chip cookies esp the cookie dough. Its very simple and you can dehydrate them if u like but i dont! Everyone who tries them is usually shocked on how much it really tastes like reg cookies. tell me how it goes if you try them out
2 Cups cashew powder
1/2 cup agave or dates (i use agave)
1/4 cup raw cacao butter, melted-- (may use more if you want your cookies much more moist)
1/2 cup chocolate chips or cacao nibs
(pinch of salt, optional)
For chocolate chips you can mix 1/4 cup cacao powder, agave (sweeten until your liking, 1 tablespoon coconut oil (optional) i never add it. but it holds the chip chips together. Freeze overnight.
By hand, mix the first 2 ingredients together first and once somewhat softened, add raw cacao butter. Then fold in chocolate chips.form into cookies or you can roll them into balls or whatever shape you like.

Alissa's book has several. I haven't tried any of them, but I will eventually as I am working my way through every recipe in Alissa's book. (See the thread Alissa and Annie.
My experience so far is that Alissa's recipes are delicious!

The coconut/lime cookies from Sarma's new cookbook are really good. The cranberry/ginger cookies from Sweet Gratitude are awesome for the holidays.

Myself Ferry and i am housewife in UK.i saw your food recipie which you
posted. i like that receipie because coconut and almonds are my favourute

Do you have Alissa's book? She has great ones...I also like Matt Amsdaen's book "Rawvolution" for simple recipes...
Stuff an almond in a date and roll it in coconut....agave first if it won't stick....mmmmm!
or
put several "stuffed" dates in a baggy with some cacoa and coconut and shake it up....eat or freeze....yum yum!

I start with a base of dates and a bit coconut butter or oil (blended with a bit of water to get it going). I add a few handfulls of sesame seeds (I don't measure it...I just eyeball it. You want enough sesame seeds to be able to form a dough). Then I split it into 3, add different flavours to each batch, spread it out, score it into squares and dehydrate.
Ginger snaps: add fresh grated ginger
lemon cookies: add juice and zest of one lemon (these cookies taste just like the lemon part of lemon meringue pie, one of my favourite pre-raw desserts)
chocolate cookies: add cacao powder to taste
And there you go! You can dehydrate them as long as you like...I like them a bit chewy, but my sister prefers them crunchy (like crackers), so I dehydrate them longer when I'm making them for her. I imagine the crunchy ones would last for a very long time...not that they've ever lasted long enough in my house to test the theory!
Don't leave out the coconut butter! It doesn't really do much to alter the taste, but without the butter/oil, the cookies stick to the parchment paper in the dehydrator.
