View Full Version : Creme caramel/flan recipe? Can't find anything here.

Was wondering if anyone had stumbled upon a good creme caramel or flan recipe? I've been wanting to try to make a raw version for some time but don't want to re-invent the wheel, as it were. Someone out there must have already come up with something so hoping someone here has seen a recipe for this and can share.

This would be a great recipe to rawenize, I used to love creme caramel.
I think I could try and come up with something, I'd blend cashews/macadamias and water for the creme, add chia seeds for the gelatinized texture, honey or agave to sweeten and some vanilla. Then some honey or agave poured on top.
If I have time I'll try it today and report back, it will take a few hours for the chia to gel up though. I have a feeling this may come out quite good.

Well I couldn't wait and did it already it I think it will come out great, I got it on the first try without even having to adjust the amount of any ingredient!
Creme Caramel
1/2 cup water
1/2 cup cashews or macadamia nuts
1/2 cup dates (if not fresh, soaked for 20 minutes)
1/4 cup agave nectar
2 T chia seeds
1/2 vanilla bean
Blend in high speed blender until smooth. Pour in serving cups, drizzle with agave or honey and refrigerate for 1-2 hours until set.

It came out more pudding like in texture, so maybe add a bit more water and perhaps more chia seeds. I know chia pudding is very creme caramel like in texture so I'll try adjusting the ratios to improve the texture.

sorry about my stupid asking, but what are chia seeds?? i've seen this a few times in this board, but i couldn't find anything like it in germany. is it a vegetable? a fruit? a nut?

My very favorite cookbook (aside from Alissa's of course) is Sweet Gratitude. Page 190 has a fabulous-looking Creme Caramel recipe. Hint: Irish Moss and coconut milk.

chia seeds are a SEED. you can find/buy them online. you can also Google them to find out more info.

If you fail to get them I can send some on to you. I am going to the U.S. in a couple of weeks and can get some more.
I do not expect that there is any restrictions in sending seeds through the post within the EU but I am not so sure that you can get them posted in from the U.S. I bring them back in my luggage.
