There are so many myths regarding the potato. Living in the Potato State of Idaho here’s some real facts for you.

One medium-sized potato has about 110 calories. Potatoes rank highest in potassium among the top 20 most frequently consumed raw vegetables and the 20 most frequently consumed raw fruits.

The majority of carbohydrates in potatoes are complex carbohydrates. The kind that fuel the body and brain and the body’s main energy source.

A potato eaten with the skin offers dietary fiber, is rich in vitamin C and a good source of both potassium and vitamin B6. Potatoes also have small amounts of nine other vitamins and minerals.

Potatoes contain antioxidants such as carotenoids and anthocyanins

So why not use them in your dehydrators and make “potato chips”?

I love raw potatoes...I have never seen any reliable and proven sources listed for anything saying they are not good for us. I ate so many as a kid. Doing great today,didnt die and had extrmely good health. hmmmmm

Toxic potatoes.........hmmm.

I ate raw potatoes right from the garden as a kid. I have seen squirrels eat them and rabbits. My dogs get a real kick out of digging them up and eating them.

I will agree that eating raw potatoes which are green can be toxic and the way to avoid that is NOT to eat them green.

Anyway I think I will try them in the dehydrator with a little salt and something spicy. I'm let you know how it works out.

You can, but... You might not like the taste of them. I didn't. I did check them along the way and at one point they were soft and warm and I really liked the taste of them. But after that? Pppppyuck!

My mom and daughter like to eat them out of hand like an apple. But I don't like them that way.

N. Walker does even recommend a raw potatoe juice, it is apparently extremely healthy. It did always taste horrible to me but if you make a nice fruity juice and just add some p. you won't notice anything unpleasant :)

Raw potato juice as well as cabbage juice, although not the greatest tasting, can cure ulcers pronto. Potato is a wonder food to me. Green ones toxic, as is anything unripe.

Potatoes being green is not because they are unripe, it is because they have been exposed to light.

I have yet to try potatoes raw but I will do ... and I have a friend with ulcer problems so I will recommend potato juice to her.

oooooop silly me.. I knew they turn green when exsposed above ground and in the kitchen in the light. They are ripe even when lil...silly goosey me,,thanx for the correct.green doesnt always mean unripe..heehee

Even with regular light the potatoe can develop toxic glycoalkaloids. Green color is a good indicator but also the taste. Sometime the color is fine but as soon as the potatoe as been expose to a light, it will develop this poison and not necessary turning green. You will reconize it by the taste.

I think, it is best to mourn the thought of eating potatoe again. I simply go with the sweet potatoe

Potato (Solanum tuberosum) is a common introduced garden plant cultivated for its edible tubers. The entire plant contains toxic glycoalkaloids but usually in harmless quantities in the edible tubers. However, in the presence of light, the tubers photosynthesize and coincidentally increase the amount of toxins. The skin, eyes, and sprouts of the tubers can develop toxic amounts. Even the flesh of the tuber can develop toxic quantities of the glycoalkaloids. Cattle, sheep, and swine as well as humans were poisoned and died after ingesting parts of potato plant. Other animals were also been poisoned experimentally. A dog became comatose after ingesting green potato tubers. The aboveground plant portion can also be toxic. The berries produced by the plant can contain 10-20 times more glycoalkaloids than the tubers (Cooper and Johnson 1984). The glycoalkaloids solanine and chaconine are not destroyed by normal cooking. Alkaloidal levels above 20 mg/100 g are considered unsafe for human consumption. Some cultivars have naturally high concentrations of alkaloids and have been rejected for use. Care should be taken to store potatoes in light-proof paper bags. If any green-colored potatoes are found, they should be discarded. Potato peelings and sprouts destined for a compost heap should be buried and kept from dogs or other animals. Sharma and Salunkhe (1989) provide an excellent review of potatoes and toxins and their effects on animals.

I dunno. I ate ALOT of them when I was a kid and never had a problem. I just dont buy into alot of the hype that goes round today. Seems there comes a reason to panic over everything that we used to do in the good ol days.

Seems people can live in a world of fear or they can (yes be wisely careful) relax and enjoy life without worry over so much stuff.

me, thats what I choose. I eat a raw tater every now n then whenever my raw intuition asks for one.

i've made potato chips before in the dehydrator. i soaked the chips first for about 6-8 hours to get the starchies out. but does that mean theyre still toxic?

i once read that farmers only feed cooked potatoes to their pigs to fatten them up--raw potatoes don't make them fat.
