Pumpkins are everywhere right now. I've always been confused about this one. Can you eat the outer shell? Can you eat the seeds the way it is or does it need to be dehydrated it as well? There is a pumpkin sale down the street around the corner from where I live. I almost bought one but didn't know what to do with it. I would like to buy one. Please point me in the right direction with this one. Thanks!!!

Okay. Here's the deal. The outer skin I wouldn't eat first because it's very tough and second chances are it's not organic. Even if it was I'd be hesitant. MAYBE I'd juice the organic skin and mix it with something strong like pineapple (blended), but I don't think so. The seeds have a hard outer shell. Crack those bad boys open and eat the raw insides...the true seeds...not the casing.
The "flesh" (goofy word isn't it? Just as goofy as the "meat" of the coconut!) but THAT part I personally would make noodles or pumpin pie or both.
So yeah. Go buy one! Have fun w/it!

It would be fun to make thin noodles, then mix in some raisins, pecans, agave and coconut and you have a Fall fun salad.
page 498 in Alissa's book has a GR8 pumpkin pie recipe.

Sweet!! I will be buying some pumpkins tomorrow!! There are some huge ones at some locations in my area that are almost big as a tire! "Wow" is the word when I saw them!! Happy Harvest! :)

Even with the hard casings, a decent amount of time in my blender makes the seeds palatable. Blend the fLeSh!@!! and the seeds together for a dopepuree. Take lil test bites until no jaggy bits remain. Enjoy your nourishing autumnsauce.

Yesterday AnneMarie Gianni made raw pumpkin bars on the Renegade Health Show. Looked yummy. Bars used both pumpkin seeds and the pumpkin meat.
