Baked Macaroni and Cheese

CASHEW CHEESE SAUCE
1 3/4 cups cashews, soaked 1-2 hours
2 tablespoons lemon juice
2 tablespoons water
1/2 cup olive oil
1 teaspoon sea salt
1/4 up nutritional yeast
1/4 medium shallot
1/2 teaspoon chili powder
Pinch cayenne
Pinch turmeric
1/2 clove garlic
Black pepper to taste

ASSEMBLY
4-5 yellow squash, peeled with ends cut off
Sea Salt
1 recipe Cashew Cheese Sauce
Finely chopped walnuts (optional)
Chili powder (optional)
Paprika (optional)

CASHEW CHEESE SAUCE
Blend all ingredients in Vita-Mix until completely smooth.

ASSEMBLY
Process squash through spiral slicer to create long noodles; roughly chop the noodles, toss with a bit of salt, and let sit for 30-45 minutes.

Mix noodles and Cashew Cheese Sauce in a bowl and then spread into casserole pan. Optional: Top with finely chopped walnuts and extra chili powder or paprika.

Place in bottom of dehydrator at 115 degrees for 1-2 hours to warm before serving. Serves 4.

Great newsletter and recipe. I already have the book or I would be in line to get the copy you are giving away. :)

I've made this recipe several times. According to my taste buds, to make it extra special, every ingredient in the sauce is required, including the shallot.

Oh my Goddess! I made this and wowowowowowowow - WOW! If you want to make something to take to a get together - THIS is it!
SO GOOD!!!
I only made half but will make this again this week. and the walnut topping really adds to it.

It could be made with macadamias in place of some or all of the cashews. Then it would really be Mac n' Cheez. ;)

I'm so glad you're enjoying it!! I'm working on a recipe for mac 'n cheese with no nutritional yeast, but this one was sooooo good too!!

I'm making this for dinner tonight! Using Macs instead of the cashew....I'm out of those .... and other squash subs too.....

sounds pretty easy, and not too long to make.

I made this a while ago and really liked the cheese sauce but didn't like it with the zucchini noodles. One thing I did wrong was that I forgot to peel the zucchini. Could that have made such a huge difference??

I wonder if the kelp noodles could be used instead of the zoodles?:)

Oh yeah! The kelp would be good too. Did you let the salted zucchini sit? THAT made a difference to me...

It IS. Wished I would've made the entire recipe...I bet it will freeze well too!

This is definitely a (SAD/CRAP) crowd pleaser. I almost typed plowd cleaser!!! WHOA! :eek: Too much smoothies for me today! WOO HOO!!!!!!!!!!!
