View Full Version : Mega Mini-Calzone Session, Day 1

It isn't exactly a party, because both my daughters are busy with other things and I am battling a virus, but I still got started on my "Raw Hot Pocket" or mini-calzone session. I made a double batch of dough this morning and just finished putting the fourth tray of calzones in the dehydrator (that is all that will fit!).
Tray one is walnut basil pesto with green peppers and mushrooms:

And this is what it looks like when the tops are on. I had to use a fork to join the two sides of crust because I got the dough a little too dry. Last time I just pinched them together and it worked fine. So be sure to remove your dough from the dehydrator while the top is a bit tacky.

Here are pizza calzones: marinara sauce with olives, mushrooms, and green peppers.

Here are meatball and marinara calzones. I used the Liveburger recipe from Frugal raw. I should have dehydrated the burger balls first but ran out of time. So they totally squished when I put the tops on. Oh well! I will dehydrate the rest like leather and cut it into strips for tomorrow.

Tune in tomorrow for fajita and jalapeno (I will use anaheim because I am a wimp :D) cheeze, and burger and cheddar.

My daughter and I split one fo the basil pesto ones this morning and she gave the ultimate compliment, that it "tastes just like a hot pocket." LOL, I know I know, I watched the video, but our family loves (loved) our hot pockets! :eek::D
I thought it was delicious too.

Renee, did you follow Alissa's recipe? What is your opinion of the filling? It's such a process, I'd hate to take all that time and then not like the filling :o How's the mac mozzerella?
I know I want to do the following filliings:
~broccoli / cheddar cheese (with that amazing rich cheddar sauce)
~onion dip / mushroom
~fajita marinated veggies
~curry marinated veggies
I'm also currently fermenting some nut cheese (a la probiotic powder) if that turns out, I'm going to add it to one with veggies.

Hi, I'm really craving your raw hot pockets.
The part I'm confused about is the dough part.
Is it dehydrated to a point where it's still soft enough to close the edges and yet firm enough to cut in rectangles, then dehydrate it some more? How was that done?

If you follow the directions exactly in Alissa's book, it will be just right. The dough develops a "skin" that allows you to flip it and peel off the teflex. But it is still "gooey" in the middle so you can seal the edges together. I learned the hard way that this is one recipe you can dehydrate too long, becuase I had a hard time sealing the edges on the batches I let sit too long.

yea, I followed Alissa's recipe and it is worth all effort to make it!!! I had already made the cheese before and froze it, so I didn't need to do that and it saved on time there. In her book Alissa says of all the recipes in her book she's most proud of this one, and I totally see why!!! It even froze well....not that it stayed frozen long!!

MMMMMM, sounds good. I am green smoothie fasting right now or I would join you.
My favorite of all I have made was the fajita type one. I made Da Bomb Cheese sauce and chopped up an anaheim pepper in it and used that as the sauce. Then I loaded in tons of different colored peppers, onion, and mushrooms. It was OOOOO so good. Also like broccoli and cauliflower with plain cheeze sauce.

never made these before. Question do you use the combined ingredients in the spinach dip and marinated veggies as a guide(when making a substitution) to how much ingredients to purchased when making these? I don't want alot of left overs. Thanks

Hey O, there are no wheatberries in the Calzone... just Buckwheat. When you pour in the EVOO when making the breading, start with a drizzle because you may not use the entire amount.

Which of Alissa's books? I tried making calzones long time back I believe from one of her books and I flopped--not her. Maybe need to crank out dehydrator again! Hardly using these days. Thanks.

I'm trying this now because I love the idea of making them hot pockets - I used to love those things and it'd be great to eat a healthy one :D I put the whole batch on one tray in a rectangle and it's weird because my dehydrator used to take FOREVER to dry things and suddenly it's always faster.

i can't tell if they're done! it's been 9 hours and i know the book says 12-14 but since they're little ones i wonder if that matters? i'm hungry - maybe i'll try one :D
