Please could you recommend foods which, unlike most fruits, are very high in carbohydrate but are not acidic, or at least not highly acidic, and thus not a threat to the teeth?

I can't. Sorry. I don't concern myself with carbs and such. I'm sure though others will pipe in...

The problem is attaining close to the 80 % of calories from carbohydrates without damaging the teeth or, where enamel erosion has occurred, permitting remineralisation whilst still eating well and getting enough calories for energy.

I actually worry about that too at times although I noticed my mouth feels a lot cleaner in general when I drink lemon aid or eat apples. (they clean your teeth).

Only thing I can recommend though is brushing your teeth with baking soda or using a toothpaste that protects in the erosion of enamel.

Any fruits and veggies have carbs in them. IF they are high is another question. Anyone that says they don't bother with carbs is seriously kidding themselves. You need carbs to help your brain function properly and to help your body properly metabolize things, is just a few things in short.

Try oats and soak them from hours to days to eat. Incorporate other things together. Add maple syrup/ honey to things. I'm sure if you love raw desserts like I do, you'll find a variety of things.

Carbs are your friend. Don't be afraid of them. :)
