View Full Version : Theobromas Shortbread cookies

1/4 cup diced almonds
1/4 cup cashews
1/4 Cup Maple Sugar, fine
1 Tsp. Ground Cinnamon
2 TB. Coconut Butter
blend together in high speed blender until clumpy. Gather into lump and take rolling pin and roll out. (it make take several tries because it will want to break or stick to rolling pin. If all else fails flaten as much as you can with hands!)
Once flat roll out onto tray and cut shapes with cookie cutters. Take a knife and gently scrape away trash and pop into freezer for about 2 hours.
I have a rubber cutting board so I just gently flex the sheet to pop them off. A hard sheet may require more cunning.
These taste just like the real thing!!!! EEEEK!!

I have not used maple sugar yet. I've only seen it in one store and it costs $12 for a jar the size of a container of spice. :eek: I have substituted maple syrup in a recipe that called for maple sugar. That might work if I dehydrated to cookies a little....?

honestly these firm up perfectly in the freezer so i don't know if the dehydrator thing works. I made another batch with a little maple powder and a little maple syrup. As long as your not using tons, I think they should harden still just fine.
gonna use the ones I made last night and decorate them later!!!

Theobroma, please, how many cookies of what size does that recipe make?
I keep getting surprised by the raw recipe yields. Some of the recipes make a lot more than I expect, and some that seem to use a lot of expensive ingredients seem to make a lot LESS that I would have hoped.

I used a small cup to cookie cut them out, and then I rolled the batter out again with the left overs until I had no dough left... came to about 10 cookies I think,.

Just hold out until they are in hardened cookie shape... top off with a lil "ice cream" and you have ice cream sammiches!!! Crazy good, and way better then the real thing!;)

the ice cream sandwich suggestions sounds marvelous !
I made these 2 days ago after reading the recipe and had two tablespoons of it on a litttle dish and boy were they tasty. I smoothed the rest of the "dough" on a squared glass pyrex and placed it in the fridge and just as you were saying they solidify really well in the fridge and the texture binds really well.
Thanks for posting this recipe they are delicious and very very filling.
Two Tbs. of these is the right serving for me =:+3

Quick question - when you say coconut butter do you mean the coconut oil or the stuff that is processed coconut meat and oil? I am having this problem with recipes. Many say coconut butter but when I have made them and then inquired they meant coconut oil so I am checking first before making them. It makes a difference. Thanks, they sound good!

I just printed this recipe out and am adding it to my raw recipe notebook. (Mmm, cinnamony and mapley...this has gotta be great!)
I think this, as well as some other raw 'cookie' recipes, will SAVE me during the upcoming be-here-before-you-blink holidays!

Maple sugar isn't raw, right?
I think the problem with substituting agave, honey, or maple syrup is that it prevents it from hardening correctly in the freezer. I won't be able to make it, but it sure sounds good!

Maple sugar is maple syrup dehydrated in to a powder. You can try agave but I don't think the flavor will be as nice.

Theobroma, I wrote down your recipe, put it on my kitchen table and have been staring at it every day for weeks. I can't find an affordable maple sugar. The price in my area is over $11.00 for a small jar that contains maybe one cup. I am going to buy a jar around Christmas time and make your recipe exactly as you specified.
In the meantime, I used your recipe as a jumping off point. I didn't have almonds, so subbed with macadamias. Didn't have maple sugar, so subbed with maple syrup. Dropped the cinnamon and added vanilla and pink salt. Also added cacao powder and shaved cacao paste. Spread out thinly on non-stick sheets and dehydrated overnight.
(((Theobroma))), so maybe it doesn't resemble your recipe that much. It is more like a brownie than shortbread, but... I owe you for the inspiration. (((THANK YOU!)))
