This is adapted from one of Alissa's recipes. I love lemon pie but am not overly satisfied with making it from avocados, so I tried one of Alissa's recipes and put my own spin on it and the result is out of control delicious. You can put this in a pie crust, but I knew I just wanted the filling, so I omitted the crust. Also, I used organic extracts but you can omit these if you want. The rose flavor was inspired by my trip to Turkey, where they infuse creamy desserts with rose oil for an out-of-this-world flavor experience. I hope you enjoy this treat as much as I have.
Lemon Pudding:
1 cup fresh coconut
2 tsp. vanilla or 1 raw vanilla bean
1/8 tsp. lemon extract
3 tbl. Agave or honey
1 whole lemon
¼ cup water
Pinch sea salt
Blend all together in vitamix or food processor until creamy smooth. I recommend a vitamix. Pour into preferred pie crust or into a dish.
Rose/Vanilla Topping:
¼ cup soaked cashews
2 tsp. vanilla or one vanilla bean
1/16 tsp. Rose extract or rose water to taste
2 tbl. Agave or honey (honey combines well with the rose flavor)
1 tbl. Coconut oil
1tbl. Coconut butter
¼ cup water
Pinch sea salt.
Combine all together in a vitamix for a creamy, smooth almost frosting like topping. Pour over lemon pudding and let set up in fridge.

Oh my goodness the result is pure heaven.
